Retail butcher — Florence County

Urgent requirement: we are hiring a retail butcher in Florence County, Wisconsin. The job is in a hotel or restaurant butchery. You will break down beef, mutton and chicken carcasses into primal cuts; monitor chiller and freezer temperatures to keep the cold chain; mince meat and prepare keema on the grinder; portion steaks, chops and cutlets to the ordered weights; debone shoulders, legs and loins with a boning knife; dress the chilled counter and rotate stock by date. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher • Quick and accurate on the weighing scales and order maths Freshers welcome — about 1 years of practice is enough.
