The role involves knead and develop dough by hand and in the spiral mixer; rotate stock and follow FIFO on raw materials; score the top of loaves before baking; load and unload the deck oven with a peel; pipe and fill cakes, pastries and cream rolls; roll out short-crust and biscuit dough.
