You should have: • Familiar with deck, rack and convection ovens • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes Your main tasks: • Weigh and mix flour, yeast, water and salt to the day's recipe • Grease and clean baking trays, tins and moulds • Roll out short-crust and biscuit dough • Proof and fry doughnuts, then glaze them • Prove dough in the proofer at the right temperature and humidity • Pipe and fill cakes, pastries and cream rolls Freshers welcome — about 1 years of practice is enough.
