Abattoir worker — Washington Parish

You should have: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher • Confident knife skills and safe blade handling Your main tasks: • Run the band saw to cut cleanly through bone • Portion steaks, chops and cutlets to the ordered weights • Keep HACCP hygiene records and sanitise the block and tools • Mince meat and prepare keema on the grinder • Sharpen and hone knives on a steel and whetstone • Monitor chiller and freezer temperatures to keep the cold chain Freshers welcome — about 6 years of practice is enough.
