Head butcher • Spartanburg County, South Carolina

Urgent requirement: we are hiring a head butcher in Spartanburg County, South Carolina. You will be based at a busy retail butcher's shop. On the job you will handle: • Debone shoulders, legs and loins with a boning knife • Break down beef, mutton and chicken carcasses into primal cuts • Dress the chilled counter and rotate stock by date • Sharpen and hone knives on a steel and whetstone • Stuff and link fresh sausages with casings • Weigh, price and label cuts for the display case What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required • Able to use a band saw, grinder and sausage filler 6+ years on the tools preferred.
