We are recruiting: head butcher (New York)

Urgent requirement: we are hiring a head butcher in Dutchess County, New York. You will work in a hotel or restaurant butchery. The role involves: • Monitor chiller and freezer temperatures to keep the cold chain • Portion steaks, chops and cutlets to the ordered weights • Break down beef, mutton and chicken carcasses into primal cuts • Weigh, price and label cuts for the display case • Vacuum-pack and wrap customer orders What we are looking for: • Food hygiene / HACCP certificate • Able to use a band saw, grinder and sausage filler Full-time with occasional weekends.
