Your main tasks: • Trim fat, sinew and silver skin off the cuts • Keep halal cuts separated and clearly handled • Weigh, price and label cuts for the display case • Season and marinate meat on request • Run the band saw to cut cleanly through bone • Sharpen and hone knives on a steel and whetstone You should have: • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling Full-time with occasional weekends.
