Urgent requirement: we are hiring a sausage maker in Union County, Mississippi. Your main tasks: • Dress the chilled counter and rotate stock by date • Mince meat and prepare keema on the grinder • Trim fat, sinew and silver skin off the cuts • Sharpen and hone knives on a steel and whetstone • Season and marinate meat on request • Debone shoulders, legs and loins with a boning knife You should have: • Knowledge of halal slaughter and handling where required • Able to use a band saw, grinder and sausage filler • 2+ years experience working as a butcher 4+ years on the tools preferred.
