Great opportunity: we are hiring a confectioner in Indian River County, Florida. Requirements: • Familiar with deck, rack and convection ovens • Basic cake decorating and piping skills The role involves roll out short-crust and biscuit dough; shape loaves, rolls, baguettes and buns by hand; load and unload the deck oven with a peel; prove dough in the proofer at the right temperature and humidity; laminate puff and croissant dough by folding in the butter; knead and develop dough by hand and in the spiral mixer.
