You will shape loaves, rolls, baguettes and buns by hand; laminate puff and croissant dough by folding in the butter; prove dough in the proofer at the right temperature and humidity; keep work surfaces and equipment clean to food-safety standards; decorate cakes with icing, fondant and fresh cream.
