Ideal candidate: • Clean, presentable and friendly at the counter • Comfortable working in cold rooms and chillers The role involves: • Stuff and link fresh sausages with casings • Monitor chiller and freezer temperatures to keep the cold chain • Sharpen and hone knives on a steel and whetstone • Trim fat, sinew and silver skin off the cuts • Take customer orders and advise on cuts and cooking • Break down beef, mutton and chicken carcasses into primal cuts $3,100 per month, negotiable for the right hands.
