Immediate opening: we are hiring an abattoir worker in Sierra County, California. You will be based at a wholesale meat market. You should have: • Able to identify primal cuts of beef, mutton and poultry • Quick and accurate on the weighing scales and order maths Day to day you will portion steaks, chops and cutlets to the ordered weights; keep HACCP hygiene records and sanitise the block and tools; stuff and link fresh sausages with casings; run the band saw to cut cleanly through bone; dress the chilled counter and rotate stock by date.
