You should have: • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate On the job you will handle: • Mince meat and prepare keema on the grinder • Vacuum-pack and wrap customer orders • Debone shoulders, legs and loins with a boning knife • Weigh, price and label cuts for the display case • Trim fat, sinew and silver skin off the cuts • Sharpen and hone knives on a steel and whetstone At least 4 year(s) in a similar role.
