The role involves: • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date • Run the band saw to cut cleanly through bone • Monitor chiller and freezer temperatures to keep the cold chain Ideal candidate: • Food hygiene / HACCP certificate • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required Rotating shifts.
