Requirements: • Food hygiene / HACCP certificate • Knowledge of halal slaughter and handling where required Day to day you will debone shoulders, legs and loins with a boning knife; sharpen and hone knives on a steel and whetstone; stuff and link fresh sausages with casings; run the band saw to cut cleanly through bone; keep HACCP hygiene records and sanitise the block and tools.
