Immediate opening: we are hiring a trainee butcher in Larue County, Kentucky. You will be based at a busy retail butcher's shop. Requirements: • Quick and accurate on the weighing scales and order maths • 2+ years experience working as a butcher Day to day you will break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools; stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts; monitor chiller and freezer temperatures to keep the cold chain.
