You should have: • Food hygiene / HACCP certificate • Knowledge of halal slaughter and handling where required On the job you will handle: • Keep HACCP hygiene records and sanitise the block and tools • Portion steaks, chops and cutlets to the ordered weights • Dress the chilled counter and rotate stock by date • Mince meat and prepare keema on the grinder • Sharpen and hone knives on a steel and whetstone Rotating shifts.
