The role involves debone shoulders, legs and loins with a boning knife; weigh, price and label cuts for the display case; run the band saw to cut cleanly through bone; portion steaks, chops and cutlets to the ordered weights; season and marinate meat on request; trim fat, sinew and silver skin off the cuts.
