Sausage maker wanted in Dallas County

Great opportunity: we are hiring a sausage maker in Dallas County, Alabama. You will be based at a wholesale meat market. On a typical shift you will keep HACCP hygiene records and sanitise the block and tools; trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; season and marinate meat on request; break down beef, mutton and chicken carcasses into primal cuts; monitor chiller and freezer temperatures to keep the cold chain. What we are looking for: • Knowledge of halal slaughter and handling where required • Able to identify primal cuts of beef, mutton and poultry Full-time, day shift.
