Ideal candidate: • Physically fit to lift carcasses and stand all day • Food hygiene / HACCP certificate • Clean, presentable and friendly at the counter You will keep HACCP hygiene records and sanitise the block and tools; debone shoulders, legs and loins with a boning knife; keep halal cuts separated and clearly handled; weigh, price and label cuts for the display case; dress the chilled counter and rotate stock by date; trim fat, sinew and silver skin off the cuts.
