You will season and marinate meat on request; keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts; trim fat, sinew and silver skin off the cuts; run the band saw to cut cleanly through bone. Ideal candidate: • Able to use a band saw, grinder and sausage filler • Confident knife skills and safe blade handling • Physically fit to lift carcasses and stand all day On-the-job training and a clear path to grow.
