Day to day you will dress the chilled counter and rotate stock by date; break down beef, mutton and chicken carcasses into primal cuts; sharpen and hone knives on a steel and whetstone; monitor chiller and freezer temperatures to keep the cold chain; stuff and link fresh sausages with casings; weigh, price and label cuts for the display case. Requirements: • 2+ years experience working as a butcher • Quick and accurate on the weighing scales and order maths • Confident knife skills and safe blade handling Six days a week, one day off.
