Immediate opening: we are hiring a confectioner in Putnam County, West Virginia. You will work in a hotel pastry kitchen. You should have: • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens Your main tasks: • Proof and fry doughnuts, then glaze them • Roll out short-crust and biscuit dough • Shape loaves, rolls, baguettes and buns by hand • Decorate cakes with icing, fondant and fresh cream • Prove dough in the proofer at the right temperature and humidity Six days a week, one day off.
