Requirements: • 2+ years experience working as a butcher • Knowledge of halal slaughter and handling where required • Food hygiene / HACCP certificate You will sharpen and hone knives on a steel and whetstone; keep HACCP hygiene records and sanitise the block and tools; trim fat, sinew and silver skin off the cuts; mince meat and prepare keema on the grinder; stuff and link fresh sausages with casings. 1+ years on the tools preferred.
