You will shape loaves, rolls, baguettes and buns by hand; prove dough in the proofer at the right temperature and humidity; score the top of loaves before baking; weigh and mix flour, yeast, water and salt to the day's recipe. Requirements: • Able to stand for long hours in a hot kitchen • Knowledge of dough fermentation and proving $4,200 per month, negotiable for the right hands.
