You should have: • Familiar with deck, rack and convection ovens • Basic cake decorating and piping skills Day to day you will boil sugar syrup for glazes and icing; roll out short-crust and biscuit dough; laminate puff and croissant dough by folding in the butter; prove dough in the proofer at the right temperature and humidity.
