Day to day you will weigh and mix flour, yeast, water and salt to the day's recipe; prove dough in the proofer at the right temperature and humidity; load and unload the deck oven with a peel; rotate stock and follow FIFO on raw materials. You should have: • Understanding of food-safety and HACCP basics • Basic cake decorating and piping skills • Accurate at weighing and following recipes Freshers welcome — about 3 years of practice is enough.
