On a typical shift you will portion steaks, chops and cutlets to the ordered weights; mince meat and prepare keema on the grinder; sharpen and hone knives on a steel and whetstone; break down beef, mutton and chicken carcasses into primal cuts; trim fat, sinew and silver skin off the cuts.
