Requirements: • Confident knife skills and safe blade handling • Quick and accurate on the weighing scales and order maths • Knowledge of halal slaughter and handling where required Day to day you will trim fat, sinew and silver skin off the cuts; portion steaks, chops and cutlets to the ordered weights; weigh, price and label cuts for the display case; debone shoulders, legs and loins with a boning knife.
