Day to day you will weigh and mix flour, yeast, water and salt to the day's recipe; grease and clean baking trays, tins and moulds; rotate stock and follow FIFO on raw materials; laminate puff and croissant dough by folding in the butter. Requirements: • Food handler / hygiene certificate • Knowledge of dough fermentation and proving • Basic cake decorating and piping skills $4,000 per month, negotiable for the right hands.
