Urgent requirement: we are hiring a head butcher in Denali Borough, Alaska. On the job you will handle: • Trim fat, sinew and silver skin off the cuts • Weigh, price and label cuts for the display case • Keep HACCP hygiene records and sanitise the block and tools • Dress the chilled counter and rotate stock by date • Mince meat and prepare keema on the grinder • Break down beef, mutton and chicken carcasses into primal cuts Ideal candidate: • Knowledge of halal slaughter and handling where required • Food hygiene / HACCP certificate • Comfortable working in cold rooms and chillers Freshers welcome — about 5 years of practice is enough.
