Ideal candidate: • Clean, presentable and friendly at the counter • Physically fit to lift carcasses and stand all day Your main tasks: • Weigh, price and label cuts for the display case • Mince meat and prepare keema on the grinder • Break down beef, mutton and chicken carcasses into primal cuts • Debone shoulders, legs and loins with a boning knife • Trim fat, sinew and silver skin off the cuts 5+ years on the tools preferred. $4,400 per month, negotiable for the right hands.
