Urgent requirement: we are hiring a head butcher in Hardy County, West Virginia. You should have: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate Day to day you will keep halal cuts separated and clearly handled; stuff and link fresh sausages with casings; break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case; trim fat, sinew and silver skin off the cuts.
