Urgent requirement: we are hiring a pastry baker in Lake County, Colorado. You will be based at a cake shop. Your main tasks: • Prove dough in the proofer at the right temperature and humidity • Knead and develop dough by hand and in the spiral mixer • Check finished products for colour, crumb and weight • Decorate cakes with icing, fondant and fresh cream • Laminate puff and croissant dough by folding in the butter • Score the top of loaves before baking You should have: • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes Freshers welcome — about 4 years of practice is enough.
