On the job you will handle: • Keep halal cuts separated and clearly handled • Sharpen and hone knives on a steel and whetstone • Run the band saw to cut cleanly through bone • Dress the chilled counter and rotate stock by date • Break down beef, mutton and chicken carcasses into primal cuts • Season and marinate meat on request You should have: • Able to use a band saw, grinder and sausage filler • Knowledge of halal slaughter and handling where required • Able to identify primal cuts of beef, mutton and poultry A stable, long-term role with a friendly crew.
