You should have: • Clean, presentable and friendly at the counter • Able to identify primal cuts of beef, mutton and poultry The role involves: • Keep HACCP hygiene records and sanitise the block and tools • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Debone shoulders, legs and loins with a boning knife • Portion steaks, chops and cutlets to the ordered weights At least 1 year(s) in a similar role.
