Requirements: • Confident knife skills and safe blade handling • Quick and accurate on the weighing scales and order maths On a typical shift you will run the band saw to cut cleanly through bone; trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; season and marinate meat on request; break down beef, mutton and chicken carcasses into primal cuts.
