Now hiring: we are hiring a head butcher in Henderson County, Kentucky. On a typical shift you will monitor chiller and freezer temperatures to keep the cold chain; sharpen and hone knives on a steel and whetstone; vacuum-pack and wrap customer orders; break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools. You should have: • Able to identify primal cuts of beef, mutton and poultry • Physically fit to lift carcasses and stand all day • Able to use a band saw, grinder and sausage filler At least 6 year(s) in a similar role.
