You will debone shoulders, legs and loins with a boning knife; stuff and link fresh sausages with casings; run the band saw to cut cleanly through bone; weigh, price and label cuts for the display case; mince meat and prepare keema on the grinder; break down beef, mutton and chicken carcasses into primal cuts.
