On a typical shift you will load and unload the deck oven with a peel; roll out short-crust and biscuit dough; boil sugar syrup for glazes and icing; weigh and mix flour, yeast, water and salt to the day's recipe; rotate stock and follow FIFO on raw materials. What we are looking for: • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens 6+ years on the tools preferred. $4,700 per month, negotiable for the right hands.
