Ideal candidate: • Comfortable working in cold rooms and chillers • Physically fit to lift carcasses and stand all day • Able to use a band saw, grinder and sausage filler The role involves keep HACCP hygiene records and sanitise the block and tools; monitor chiller and freezer temperatures to keep the cold chain; trim fat, sinew and silver skin off the cuts; season and marinate meat on request; stuff and link fresh sausages with casings; portion steaks, chops and cutlets to the ordered weights. 5+ years on the tools preferred.
