The role involves hand-wash pots, pans and trays using the three-sink wash-rinse-sanitise method; scrub out grease traps and clear blocked drains and gullies; keep the dish pit tidy, dry and slip-free throughout service; mop the floors and wipe down kitchen surfaces and splashbacks.
