You should have: • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler Your main tasks: • Vacuum-pack and wrap customer orders • Break down beef, mutton and chicken carcasses into primal cuts • Take customer orders and advise on cuts and cooking • Weigh, price and label cuts for the display case Freshers welcome — about 3 years of practice is enough.
