Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Quick and accurate on the weighing scales and order maths • 2+ years experience working as a butcher The role involves keep HACCP hygiene records and sanitise the block and tools; debone shoulders, legs and loins with a boning knife; trim fat, sinew and silver skin off the cuts; run the band saw to cut cleanly through bone; dress the chilled counter and rotate stock by date.
