Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Season and marinate meat on request • Stuff and link fresh sausages with casings • Keep HACCP hygiene records and sanitise the block and tools Ideal candidate: • Physically fit to lift carcasses and stand all day • Clean, presentable and friendly at the counter • Able to use a band saw, grinder and sausage filler 2+ years on the tools preferred.
