Urgent requirement: we are hiring a butcher in York County, Virginia. You will be based in a hotel or restaurant butchery. Ideal candidate: • Food hygiene / HACCP certificate • Able to use a band saw, grinder and sausage filler • Able to identify primal cuts of beef, mutton and poultry On the job you will handle: • Monitor chiller and freezer temperatures to keep the cold chain • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Run the band saw to cut cleanly through bone • Keep halal cuts separated and clearly handled • Trim fat, sinew and silver skin off the cuts Freshers welcome — about 1 years of practice is enough.
