Requirements: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher You will vacuum-pack and wrap customer orders; take customer orders and advise on cuts and cooking; sharpen and hone knives on a steel and whetstone; portion steaks, chops and cutlets to the ordered weights; break down beef, mutton and chicken carcasses into primal cuts; stuff and link fresh sausages with casings.
