Sausage maker — Terrebonne Parish

Great opportunity: we are hiring a sausage maker in Terrebonne Parish, Louisiana. Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Dress the chilled counter and rotate stock by date • Stuff and link fresh sausages with casings • Monitor chiller and freezer temperatures to keep the cold chain • Take customer orders and advise on cuts and cooking • Portion steaks, chops and cutlets to the ordered weights Ideal candidate: • Physically fit to lift carcasses and stand all day • Food hygiene / HACCP certificate Rotating shifts.
