You will prove dough in the proofer at the right temperature and humidity; rotate stock and follow FIFO on raw materials; weigh and mix flour, yeast, water and salt to the day's recipe; shape loaves, rolls, baguettes and buns by hand; decorate cakes with icing, fondant and fresh cream; keep work surfaces and equipment clean to food-safety standards.
