You should have: • Food hygiene / HACCP certificate • 2+ years experience working as a butcher • Physically fit to lift carcasses and stand all day Your main tasks: • Season and marinate meat on request • Sharpen and hone knives on a steel and whetstone • Trim fat, sinew and silver skin off the cuts • Keep halal cuts separated and clearly handled • Break down beef, mutton and chicken carcasses into primal cuts Six days a week, one day off.
